Wash slate boards with a soft sponge or cloth and mild dish soap in warm water and allow to air dry completely before storing them or applying mineral oil. Rubbing mineral oil in will also hide any scratches.
Remove odors by rubbing the board with kosher or table salt and half a lemon. To sanitize, wash the board with a solution of one part vinegar to five parts water.
